  • Cantal clafoutis, miso mayonnaise, Cantal tuiles (baked wafer) and red onion pickles
  • Saint-Flour lentils ‘volcano’, with Fourme d'Ambert (Auvergne blue cheese) creme, tomato crumble

Main courses*

  • Truffade with Auvergne sausage
  • Auvergne Label rouge chicken fillet (French sign of higher quality meat), mushroom clafoutis, mashed blond Planèze peas and its spicy juice with coffee
  • Candied veal casserole, Charroux mustard sauce and pan-fried carrots

Cheese or desserts*

  • Auvergne A.O.P cheese plate
  • Finger puff pastry in a jesuite manner, blueberry mousse and Birlou mousse
  • Chocolate cake with Guayaquil Vichy pastilles mint heart
  • Artisanal cup of ice cream (Birlou, vanilla, hazelnut)
  • Gourmet coffee : Pastille Vichy (mint) marshmallow, Birlou mousse, cacao crumble, blueberry fruit jelly, madelaine with honey (surcharge of €2 to be paid on site)
